How to Cook Stew Meat
Pre’s stew meat is cut from the bottom and inside round roast. The muscles in this area of the cattle are used for movement, which is why the meat tends to be lean and less tender than other cuts. This is why it's often cooked in ways that help tenderize it, like roasting or slow-cooking.

How to cook in the oven:
- Bring meat to room temperature for 30 minutes.
- Remove from the package, and blot dry with a paper towel.
- Season with kosher salt, and coat with high-heat cooking oil.
- Brown meat in a saute pan over medium-high heat.
- Transfer to a large pot or Dutch oven with a lid, and cover with braising liquid.
- Roast in a preheated 300°F oven for 1 hour.
How to cook in the slow-cooker:
- Bring meat to room temperature for 30 minutes.
- Remove from the package, and blot dry with a paper towel.
- Season with kosher salt, and coat with high-heat cooking oil.
- Brown meat in a saute pan over medium-high heat.
- Transfer to a slow cooker, and cover with braising liquid.
- Set the slow cooker to low, and cook until tender, for about 4 hours.
