Zoodles & Meatballs
Super-flavorful Pre meatballs top grain-free zoodles! This dish is as fun to eat as it is to say.
Ingredients
Meatballs
- 1 lb. PRE ground beef
- 1 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 2 tbsp. freshly minced herbs (rosemary, thyme, oregano)
- 4 garlic cloves (minced)
- 1/4 cup walnuts (chopped)
- 1 tsp. salt
- 1 tsp. pepper
- 1 egg
- 2 tsp. almond flour
- 2 tbsp. ghee
Zoodles
- 2-4 medium zucchini
- 1 tsp. salt
Other
- Tomato Sauce
Instructions
- Spiralize your zoodles according to appliance instructions. Lay flat on a clean kitchen towel and sprinkle with salt. Set aside.
- In a large bowl, combine the ground beef, salt, pepper oil, vinegar, herbs, garlic and walnuts. Mix well. Add in the egg and flour. Mix until fully combined.
- Shape 15-16 one inch meatballs. Roll between hands to shape.
- Heat a large skillet on medium high heat. Add in the ghee. Arrange meatballs in the skillet. Cook until browned, about 3 minutes a side, using tongs to gently turn.
- In the meantime, combine all the sauce ingredients in the blender and blend until smooth. When the meatballs are browned, add the sauce to the skillet and lower heat to low. Simmer for 10 minutes.
- Gently pat zoodles to remove excess liquid. Serve them in bowls and top with meatballs and sauce. Garnish with fresh basil and goat cheese crumbles.
