Taco Salad
With a goddess dressing and juicy, flavorful 92% lean ground beef, this is a Paleo-friendly standby.
Ingredients:
- 1 lb. Pre® ground beef
- 1 tbsp. chili powder
- 1 ½ tsp. ground cumin
- 1 tsp. sea salt
- 1 tsp. black pepper
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. paprika
- ¼ tsp. red pepper flakes (crushed)
- ¼ tsp. dried oregano
- 1 tsp. coconut or almond flour
Salad
Green Goddess Dressing:
- ½ garlic clove (minced)
- ½ cup mayonnaise
- ½ avocado
- ¼ cup coconut milk
- ½ cup parsley (chopped)
- ¼ cup cilantro
- 2 tbsp. tarragon (chopped)
- 3 tbsp. chives (chopped)
- 2 tbsp. lime juice
- 2-4 canned anchovies
- salt and pepper to taste
Salad
- 1 head of romaine (chopped)
- pico de gallo
- fried plantains
- guacamole
- Mix all taco seasoning ingredients together and set aside.
- Heat large skillet over medium-high heat. Put ground beef into skillet and cook, while stirring, until beef is completely browned.
- Mix taco seasoning mixture with ¼ cup of water. Blend, then pour over beef and bring to a simmer. Cook until moisture is absorbed into meat (about 5 minutes).
- Put all green goddess dressing ingredients in a blender or food processor and blend until smooth (about 30-45 seconds).
- Serve seasoned beef in romaine lettuce cups or over chopped salad greens then top with dressing and pico de gallo and fried plantains.
