Stuffed Mushrooms
Ingredients:
- 1lb ground beef
- 1 qt cremini mushrooms
- 1 medium shallot, minced
- 2 clove garlic, minced
- 1/2 block cream cheese
- 1/2 cup Gorgonzola, crumbled
- 1/2 cup roasted red peppers, diced
- 1/2 cup chopped parsley
- 1/2 cup panko
- 1/4 cup grated parmigiano reggiano
- 2 tablespoons balsamic vinegar
- 2 tablespoons salt
- De-stem mushrooms. Dice mushroom stems, reserve.
- Finely dice shallot and 2 cloves garlic.
- Mix ground beef, mushroom stems, shallot, garlic, red peppers, gorgonzola, balsamic vinegar, parsley, cream cheese, and salt.
- Stuff mushrooms with meat mixture, ensuring meat mixture is mounded on top.
- Bake at 400 for 25 min until beef is cooked
- Remove from oven.
- Plating and serving: Garnish with parsley, Parmesan, and a little drizzle of extra virgin olive oil serve.
