Stuffed Mushrooms

Ingredients:

  • 1lb ground beef
  • 1 qt cremini mushrooms
  • 1 medium shallot, minced
  • 2 clove garlic, minced
  • 1/2 block cream cheese
  • 1/2 cup Gorgonzola, crumbled
  • 1/2 cup roasted red peppers, diced
  • 1/2 cup chopped parsley
  • 1/2 cup panko
  • 1/4 cup grated parmigiano reggiano
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons salt
 
    1. De-stem mushrooms. Dice mushroom stems, reserve.
    2. Finely dice shallot and 2 cloves garlic.
    3. Mix ground beef, mushroom stems, shallot, garlic, red peppers, gorgonzola, balsamic vinegar, parsley, cream cheese, and salt.
    4. Stuff mushrooms with meat mixture, ensuring meat mixture is mounded on top.
    5. Bake at 400 for 25 min until beef is cooked
    6. Remove from oven.

    7. Plating and serving: Garnish with parsley, Parmesan, and a little drizzle of extra virgin olive oil serve.
