Spooky Chili Cheese Dip

Spooky Chili Cheese Dip
No tricks here, just cheesy, beefy goodness you can scoop up with your favorite cracker, chip or veggie.
Ingredients:
- 2 Pre 85% Ground Beef
- ½ c olive oil
- 2 yellow onion, diced
- 1 bunch celery, diced
- 4 cloves chopped garlic
- 2 tsp cumin
- 1 can chipotle chiles in adobo
- 2 tsp salt
- 2-4 pkg shredded Monterrey jack cheese
- 2 pkg original cream cheese
- Optional: plastic spider rings for Halloween
- Heat olive oil in a large, heavy-bottomed pot on medium heat.
- Add onions, celery, and garlic. Cook until soft.
- Add cumin and ground beef. Break up the ground beef as it browns; cook until no longer pink.
- Add chipotle chiles, salt, and any other ingredients you like in your chili.
- Bring to a boil, then reduce heat. Cover and let simmer for 20 minutes or until the chili thickens.
- Dip
- Evenly spread cream cheese on the bottom of a casserole dish.
- Pour chili on top of the cream cheese.
- Cover with shredded cheese, then place in oven or microwave until the cheese begins to bubble and melt.
- Serve immediately with restaurant-style tortilla chips.
- Top with extra cheese and plastic spider rings for spooky decor.
