Roasted Sweet Potatoes with Sage, Sweet Onions and Steak
Delicious and healthy, this dish adds a great pop of color to any spread. If you are following a Whole 30 Diet simply omit the butter in this recipe.
Ingredients:
- 1 Pre® New York Strip Steak cooked to your desired doneness
- 4 medium or 3 large sweet potatoes, peeled and cut in to 2” pieces
- 1 large sweet onion, peeled, quartered and sliced in to 1” pieces
- 1/4 C fresh sage leaves, stems removed and julienned in to thin strips (stack and rolls the leaves from bottom to top, then use a sharp knife to slice cross-wise)
- 2 T olive oil
- 1/2 t salt
- Pinch white pepper
- 1 T butter, melted
- Preheat oven to 425°F.
- Place sweet potatoes, sliced onions, sage, olive oil, salt and pepper in a large bowl and toss to combine.
- Transfer in a single layer to a parchment lined baking tray.
- Bake in oven for 30 minutes, shaking the pan every 10 minutes.
- Remove from oven and transfer to a serving dish and drizzle with the melted butter.
