Italian Beef - Freezer Meal

Italian beef sandwiches are almost as important to Chicago as deep dish pizza. The flavors of spicy peppers and slow cooked beef is what makes this dish truly memorable. This version is for a freezer meal, a meal you can make ahead and freeze then cook all together in a slow cooker.

Ingredients:

  • 1 Pre Chuck Roast, cut into 2" cubes
  • 1 tsp Redmond's Real Salt
  • 1 green bell pepper, sliced
  • 1 medium yellow onion, sliced
  • 1/2 cup giardiniera (I like hot giardiniera, but you could use mild too)
  • 1 cup pepperoncini peppers
  • 1 tbsp Italian seasoning
  • 1 tsp oregano
Equipment: 
  • Slow Cooker
  1. Place all the ingredients into a large gallon sized freezer bag. Remove as much air as possible and seal. Label the bag with the current date and expiration date (2 months later). Freeze.
  2. To cook: Remove bag from freezer and place contents into your slow cooker. You will not need water or liquid.
  3. Cover and cook on high for 4-6 hours or on low for 8-10 hours.
  4. Shred the beef as desired and serve in a bowl or in crusty sandwich bread.
