Easy 5 Ingredient Enchiladas
These enchiladas make a great go-to for quick weeknight dinners! Add Saucy Lips enchilada sauce to cooked Pre ground beef and you can have your own variation of Taco Tuesday.
Ingredients:
- 1 16 OZ package Pre 92/8% Ground Beef, or any other Pre Ground Beef
- (8) 8 inch flour or corn tortillas
- 1 package red OR green Saucy Lips enchilada sauce
- 1 4 OZ can diced mild green chilis
- 1 1/2 C shredded taco blend cheese, divided
- Preheat oven to 350 F.
- Remove ground beef from package, blot dry with paper towel and season with 1/2 t kosher or sea salt.
- Add 1 t oil to a pan and brown ground beef over medium high heat, breaking up with a wooden spoon or mallet until cooked through, about 8 minutes. Let cool slightly, about 5 minutes.
- Using a slotted spoon, place about a 1/4 C of beef on the bottom third of the tortilla. Using 1/2 C of the shredded cheese, sprinkle about 1 T shredded cheese over the beef and roll the tortilla, placing it seam side down in an 11x7 baking dish. Repeat with remaining tortillas.
- Pour Saucy Lips enchilada sauce over tortillas. Sprinkle remaining cheese and bake until warmed through and cheese has melted, about 20 minutes. If desired increase oven to broil and cook for an additional 1 to 2 minutes.
- Let cool for 5 minutes before serving.
- Serve with your favorite sides, sour cream, sliced jalapeños, chopped green onions, guacamole and salsa!
