Beef and Quinoa Stir Fry
This all-in-one meal is great for those busy days when you want health and flavor. Now.
Ingredients:
- 1 lb. Pre ground beef
- ¾ cup quinoa
- ¾ cup chicken broth
- ¾ cup water
- 1 cup broccoli
- 1 cup mushrooms (sliced)
- ½ cup carrot (chopped)
- 1/3 cup (peas)
- ½ cup soy sauce
- 2 tbsp. corn starch
- 3 cloves garlic (minced)
- 2 tbsp. sesame oil
- 1 tsp. sriracha
- 3 tbsp. honey
- 3 tbsp. red wine
- ½ cup beef broth
Instructions:
- Combine quinoa, chicken broth, and water in a sauce pan. Bring to a simmer let sit for about 20 minutes. At this point, water should be absorbed and quinoa fluffy.
- Whisk soy sauce, corn starch, garlic, sesame oil, sriracha, honey, red wine, and beef broth.
- Heat 1/3 cup of sauce in a skillet over medium heat. Once hot, add ground beef. Use a spoon to break up ground beef into small pieces. Let cook for 4-5 minutes, stirring constantly. Remove beef and set aside.
- Add another 1/3 cup of sauce to skillet. Then, add carrots and mushrooms, cooking for about three minutes. Stir well. Add broccoli and cook for an additional three minutes.
- Return beef to skillet, add remaining sauce and peas and cook for another five minutes.
- Fluff quinoa with a fork, and serve beef and broccoli over quinoa.
