Roasted Potatoes with Sweet Peppers and Onions and Steak
This potato dish will complement any steak. The leftovers will also make a great breakfast or brunch potatoes or hash browns paired with fried or scrambled eggs.
Ingredients:
- 1 Pre Brands Filet Mignon cooked to your desired doneness
- 2 pounds small to medium sized red skinned potatoes, 1” dice
- 1 t kosher salt
- 1 small red bell pepper, 1/2” dice
- 1 small sweet onion 1/2” dice
- 1 T olive oil
- 1/2 t black pepper
- 1 heaping T flat leaf parsley or any of your favorite fresh green herb, roughly chopped
- Preheat your oven to 425°F.
- Toss all ingredients except fresh herbs in a large bowl to coat evenly.
- Place in a single layer on a large baking pan.
- Roast in the oven for 20 minutes, testing doneness by piercing with a fork.
- Transfer to a serving dish and garnish with fresh chopped herbs.
