French Onion Soup
Traditional French onion soup doesn't have beef. We thought that was sad, so we created this recipe and you'll never go back.
Ingredients:
- 1 Pre Chuck Roast, dried and cubed
- 4 large onions, sliced thinly
- 3 tbsp. grass-fed butter
- 1 tbsp. olive oil
- 5 c. vegetable stock
- 2 bay leaves
- 1 tsp. dried sage
- 1 tsp. dried oregano
- 1 tsp. salt
- 1 tsp. black pepper
- 4 thick slices of French bread
- 4 slices Gruyere cheese
- Turn the Instant Pot to sauté.
- Sauté onions, butter and olive oil until onions are soft and caramelized.
- Add chuck roast cubes, vegetable stock, bay leaves, sage, oregano, salt and pepper.
- Attach lid and set valve to "sealing". Push the "manual" button and set timer for 45 minutes.
- When ready, let pressure release by turning valve to "venting." Be careful of hot steam.
- Remove lid and shred beef with two forks. Return to pot.
- Toast French bread slices.
- Wipe insides of an oven safe bowl with olive oil, add a slice of bread to the bottom of the bowl, and ladle soup on top.
- Turn your oven broiler on. Place cheese slices over the soup and broil in the oven until cheese is browned and melted.
- Serve immediately. Enjoy!
