Kimchi Brothless Mazeman Ramen

Kimchi Brothless Mazeman Ramen
Mazeman ramen, otherwise known as "brothless", ramen is perfect for a day when you don't want all the broth to fill you up, but all the flavor is still there. This has been a Pre fan favorite for years!
Ingredients:
- 1 lb. Pre 85% Lean Ground Beef
- 2 strips pork bacon
- 3 scallions (chopped)
- 2 cups kimchi (chopped)
- 1 tbsp. kimchi brine
- 1 package wheat ramen noodles
- 1 tbsp. soy sauce
- 1 tbsp. toasted sesame oil
- 1 tbsp. rice vinegar
- 1 tbsp. mirin
- 1 lime (juiced)
- 1/2 tsp. salt
- 2 eggs
- 1 tsp. rice vinegar
- Set a large pot of water to boil.
- Sauté ground beef in large skillet over medium high heat until pink is gone. Remove from skillet.
- Sauté bacon in beef fat until crisp. Remove from heat.
- In same pan, sauté scallions for 1 minute. Add 1 cup chopped kimchi. Cook another 2 minutes. Remove from pan.
- Add noodles to boiling water and cook until tender, about 7 minutes. Strain and rinse with cold water.
- Set a small sauce pot of water to boil.
- Add cooked noodles to skillet with the rest of the kimchi and kimchi brine.
- Pour in soy sauce, sesame oil, 1 tbsp. rice vinegar, mirin, lime juice, and salt. Toss until well coated.
- Mix in bacon, scallions, kimchi mixture. Toss together and portion into 2-3 bowls.
- In the sauce pot of almost boiling water, add 1 tsp. rice vinegar.
- Crack egg into a small ramekin. Swirl boiling water in a circle and carefully drop egg into the center of the swirl. Leave alone for 2 1/2 minutes.
- Retrieve egg with slotted spoon and place on top of ramen. Garnish ramen with more scallions, kimchi, or black sesame seeds.
