Hot Honey (for Compound Butter on Steaks)

Hot Honey is great on any Pre steak, this recipe is the base of our Hot Honey and Coffee Rub compound butter. Use Hot Honey to bump up the flavor of your favorite dishes, it's great drizzled on everything from salads, to tacos, to pizza. This recipe makes a medium-spicy version. To add more heat increase the cayenne and hot sauce. The flavor and spiciness develops after it sits for a while so make a base batch and taste to adjust heat level after 2 hours or so.

Ingredients:

  • 1 C honey
  • 1 t cayenne pepper
  • 1 star anise pod
  • 2 dried chili peppers
  • 1 T apple cider vinegar
  • 1/2 t smoked sea salt or kosher salt
  • 2 t of your favorite hot sauce
  1. Add honey, cayenne pepper, star anise and chili peppers to a small pan. Bring to a simmer over medium low heat, stirring occasionally. Let simmer for 1 minute, remove from heat and stir in vinegar and hot sauce.
  2. Cool for 5 minutes and adjust seasoning to taste. The heat of the hot honey will intensify so go lightly with the cayenne at first. Cool for another 5 minutes then pour in to a glass jar with tight fitting lid.
  3. Honey will keep for 8 weeks. Room temperature consistency will be stiff. Use a fork to drizzle, if you want a more liquefied version, heat in microwave at 5 second intervals until desired consistency.
  4. Add to our Garlic and Coffee Steak Rub for a delightful dinner!
