Filet Mignon with Roasted Rainbow Carrots
Leave out the Greek yogurt dipping sauce for a colorful, Keto - and Whole30 -friendly meal. .
Ingredients
- 1 PRE Filet Mignon steak
- lemon pepper
- olive oil
- rainbow carrots
- Greek yogurt
- lemon juice
- fresh dill
Instructions
- Add olive oil to oven-safe pan. Season steak with lemon pepper and sear in pan for about four minutes per side, or to preferred doneness.
- Trim stems and quarter carrots. Cover in olive oil and lemon pepper, and bake on parchment paper or Silpat at 400F for about 25 minutes.
- Mix Greek yogurt, lemon juice and fresh dill. Use as dipping sauce.
